Caramel Popcorn
6 cups unsalted Popcorn (1/4 cup kernels)
¼ cup butter
½ cup packed brown sugar
1/8 cup light corn syrup
¼ teaspoon salt
¼ teaspoon baking soda
1. Pop the popcorn. (Remove unpopped kernels for best results)
2. Cook butter, brown sugar, corn syrup and salt in sauce pan over medium heat, stirring occasionally, until bubbly around edges. Continue to cook 2-5 minutes (2 minutes for chewy caramel popcorn and 5 minutes for more crunchy caramel popcorn).
3. Remove from heat. Stir in baking soda until foamy.
4. Pour mixture over popcorn and mix thoroughly. Let cool.
This has become a favorite recipe for caramel popcorn! I have to admit to making this recipe the last couple of nights in a row! This recipe is enough for 2 people (like me) but you can certainly double the recipe if you are really into caramel popcorn!

Fresh Baked Bread
There are few people in this world who will ever be lucky enough to sample Michelle's fresh baked wheat bread. For those who have, it is certainly a treat. Michelle made 2 batches of bread (8 loaves) today. We'll freeze 6 loaves to keep them through the next week and we'll eat the other 2 right away (why wait!).
Here is the recipe:
Ingredients
7 cups hard red wheat
5 cups warm water
2 T yeast
1 1/2 T salt
2 T wheat gluten
2/3 cup oil
2/3 cup honey
10 to 10 1/2 cups ground wheat flour
1/2 T dough enhancer
1-2 cups white flour
Shortening or butter
1. Grind red wheat into flour.
2. Put water in bowl, sprinkle yeast on top, then add rest salt, gluten, oil, honey, and wheat flour; mix on low for 5 min.
3. While mixer is still going, add dough enhancer, gradually add flour. When enough flour is added dough will start to pull away from the sides of the mixing bowl. The mix 4 min. on low. Dough should be sticky.
4. Shape into 4 loaves, put in grease bread pan, cover and let rise 1" above top of pan (20-30 min.). Pre-heat over to 350.
5. Bake at 350 for 28 minutes.
6. Brush top of bread with shortening or butter to keep them soft. Then turn out of pans onto cooling rack and cover with cloth until cool.
It sounds pretty easy but honestly, I've never tried to make it myself. Maybe I will, one of these days.

KAMP Jones Turkey Wraps
Michelle discovered a most delectable creation that I call simply, "Kamp Jones Turkey Wraps." To make one you need: tortilla, cream cheese, basil, turkey slices, provalone cheese, lettuce, tomato, salt, pepper, and chopped green onion.
On a tortilla you spread some cream cheese; add just a touch of basil. Put a couple slices of (oven roasted) turkey. Over the turkey you put a couple slices of provalone cheese and melt then melt the cheese (about 30 seconds in the microwave). The you put on lettuce and sliced tomato; sprinkle on salt and pepper. Add some diced green onion and roll (wrap) it. Eat and enjoy.
It works best with garden fresh produce but I'm sure it will still be wonderful with whatever you have on hand. I enjoyed my wrap so much that I had to have another. I discovered that you need to add the basil between the cream cheese and the turkey. It made an amazing difference if you don't add it in the right place! And the onions add some good flavor too. I hope you enjoy.
